How do you protect your company recipe

From your profile, I'm going to assume you mean cooking recipes.

I suggest you publish the obvious, and at the same time:

1. keep some ingredients secret
2. keep the quantities unkown - eg a "pinch of parsley"

In terms of protecting yourself from staff taking your core knowledge with them, have them sign a confidentiality agreement that they will not use or disclose quantities of certain ingredients and key recipes which are your trademark or signature dishes.

If all else fails, publish the official recipe book and earn the royalties from it - that's how I found my killer recipe for Christmas chocolate mousse...
