If you remove a connection will they be able to send/receive emails to/from me?

If they have your email address (or you theirs), you can send emails. That's something LinkedIn can't control.

They can only send LinkedIn messages directly if you are directly connected, OR you are either an Open networker or a member of the same group where you have elected to let others message you. They can choose to send InMail or use an Introduction.
